1 can (28 oz.) Contadina® Crushed Tomatoes

1/2 cup chopped fresh basil

3 Tbsp. olive oil

2 Tbsp. red wine vinegar

1 to 2 tsp. minced garlic, to taste

1/8 to 1/4 tsp. cayenne, to taste

1 lb. uncooked pasta

1 cup diced fresh mozzarella cheese (1/2-inch pieces) or crumbled goat cheese


  1. Combine all ingredients except pasta and cheese in a large bowl.  Let stand 15 minutes for flavor to develop.

  2. Meanwhile, cook and drain pasta according to package directions.

  3. To serve, add hot pasta to bowl with sauce; toss. Stir in cheese. Or, for a heartier dish, set aside 1 cup of sauce from bowl.  Add hot pasta to bowl and toss; transfer to a serving platter.  Top pasta with sliced cooked chicken and spoon remaining sauce over chicken.
