Penne Alla Vodka
This Italian-American favorite simmers vodka, tomato sauce and a touch of cream into a rich, slightly spicy pasta sauce for a sophisticated twist on regular tomato sauce. The perfect amount of sauce for 1 pound of pasta.
1 Tbsp. olive oil
1 Tbsp. unsalted butter
1/2 cup diced onion
2 tsp. minced garlic
1/4 tsp. dried red pepper flakes
1 cup vodka
2 cans (15 oz. each) Contadina® Tomato Sauce
1/2 cup heavy cream
1 lb. uncooked penne pasta
Grated Parmesan cheese and thinly sliced fresh basil leaves, for serving (optional)
Heat oil and butter in large saucepan over medium heat. Add onion, garlic and pepper flakes and cook until softened, about 4 minutes. Carefully add vodka and simmer until reduced by about half, about 5 minutes.
Cook pasta according to package directions; drain. Meanwhile, stir tomato sauce into onions in saucepan and bring to a simmer. Simmer on medium-low heat 10 minutes. Stir in cream and remove from heat. Toss sauce with pasta, topped with cheese and basil, if desired.
