Directions

  1. Preheat oven to 400°F.  Line a large baking sheet with parchment paper. Roll dough 1/4-inch thick into a rectangle (smaller dough about 12 x 15-inches, larger dough about 15x20 inches) on a lightly floured surface.  Turn dough so that a smaller side is closest to you.

  2. Spread 1/4 cup pizza sauce in a thin layer all the way to the edges over the half of dough closest to you.  Sprinkle evenly with 2 Tbsp. cheese.  Fold the top half (plain dough) down and over the half with sauce and cheese, stretching so edges meet.

  3. With a pizza cutter or sharp knife, cut into 1/2-inch strips (about 15 strips for 11 oz. dough, and about 20 strips for 16 oz. dough).  One by one, bring a strip to the baking sheet and twist.  Keep the twist as a long stick or fold over and twist again into a shorter stick.  If making knots, use the shorter twists and tie into a small knot.

  4. If desired, lightly brush sticks and knots with another 1/4 cup pizza sauce before sprinkling with remaining 1 Tbsp. cheese.  Bake about 20 minutes, depending on the thickness of the dough, until golden brown on bottom.
